Fond Fall Memories

Nic & I made some delicious brunswick stew for dinner this evening. It was so tasty and it makes SO much that we'll be eating stew for days. Brunswick stew always reminds me of my childhood. Around my hometown it was a common fundraiser for churches to make a huge pot (I'm talking like a witches brew kind of pot) of stew and sell it by the quart. My mom would always buy tons of the stuff and freeze it because it makes a great dinner when you're in a hurry.

Here's the link to the recipe we used. We made a few adjustments to the recipe. We used corn, lima beans, blackeyed peas, potatoes, and skipped out on the onion and okra. I also recommend adding more salt than they suggest. Hope you too get to enjoy some tasty stew!
